Juliet Corson (1842-1897) was an American author and teacher of cookery. She was the secretary of the New York free training-school for women from 1872 until 1873. In 1876 she founded the New York Cooking School, open to rich and poor, charging tuition on a sliding scale so that no one would be turned away.
