Published in 1911, this is the first cookbook by an african-american and is a collection of recipes suggested by Rufus Estes, who was born a slave in 1957 and after emancipation and growing into adulthood, spent much of his life as a chef for the Pullman Private Car Service and the Subsidiary Companies Of The United States.
